Picky Pancy's Tép Rang (Carmelized Shrimp)

My baby sister is a very picky eater, this dish has been her staple since birth. 

Put a pan on medium heat, drizzle with 1 tablespoon oil (grapeseed/vegetable/canola). Saute shrimp with 1/2 teaspoon of: salt, pepper, sugar, and msg if you like.

Nancy eats this at least once a week.

Shrimp & Avocado Salad Rolls

 
Fresh and perfect for the warm weather!

Ingredients:
Rice paper
Rice vermicelli (boiled and drained)
Shrimp (boiled, peeled, sliced in half)
Avocado
Cucumber
Fill a bowl with hot water. Dip and rotate your rice paper just to get it wet, do not let it soak because it will become too soft.

Have your fillings ready.

Roll tightly.

Dipping sauce: 1 part mayo, 1 part sweet chili sauce, a tiny bit of wasabi.

Easy Crepes

 

1 cup flour
1 1/2 cup milk
2 eggs

Mix well!
Turn heat to medium (5 or 6)
Lightly grease pan between each crepe
Flip when edges pull away from sides





My favorite combo

Classic, can't go wrong here. Sweetness of the cream counteracts with the fresh tartness of the strawberry.

Et voila! Fold them anyway you want.

Pant's Favorite Deep Fried Shrimp Wontons

Delicious, really! This is my little sister's favorite little dish. The wontons are just as good in soup as they are deep fried. The key is simplicity.

Ginger, garlic, white end of scallion, salt and pepper

Defrosted and peeled.

Now smash them with your cleaver!

Smash a little at a time

I used to chop each single shrimp up into 4 pieces, and sometimes I would just process them..

But this method is much better because I like this broken texture and the wonton holds together better

Sprinkle your seasonings over and fold with the cleaver, chopping as you mix

Deep fry with the heat between 8 and 9. 

Drain on paper towel

Serve with sweet and sour sauce
Giant wonton! Two wrappers were stuck together as one

Mushroom Soup

Half a red onion
1 stick of celery
10 mushrooms
salt + pepper 
1 garlic clove 
white wine
1 potato
milk
oil

Snackables

Smoked salmon salad. Shredded cabbage. Cucumbers. Sriracha. Sesame Oil.
Instead of shredding the imitation crab and mixing mayonnaise in.. Leave the meat whole and smear in some honey mustard. Tasty.

Fish Tacos

 This was just a sudden craving. Nothing special, no cheese, no sour cream, just wanted to eat something fresh.

 
These are basa fillets that I rubbed lemongrass and chili on. Fusion tacos? 

 I placed my fillets on this makeshift grill (not broiling) for the juices to run off. In the oven for 20 minutes, flipped once. 350 F, next time I will broil it.

These are pickled serranos from my pickled peppers post.

 
Flour tortilla, shredded slaw mix, pico de gallo, and spicy peppers.

 
Fish on top!

Simple.

Comfort Food 101

The gluten free days are not exactly over, but once in awhile it is necessary to indulge. Just this once.

 
6 baking potatoes
Stems of one broccoli, peeled, cut.
1 package mix of cheese sauce, follow directions.
5 button mushrooms, sliced.
Butter
Salt

Wash and scrub potatoes. Half them lengthwise. Bake in 350 F degrees for 50 minutes. Boil broccoli stems and mushrooms for a minute. Scoop the middle out into a bowl, smash with a bit of butter, add veggies, salt and pepper. Spoon generous amount into potato skins and top with cheese sauce.

This is the ultimate comfort food, a bowl of creamy dreamy pasta. I adore bechamel because it is quick and easy so baked pasta in bechamel seemed perfectly right. Forget the fat and calories, let go of the gluten control. Just this once.

1 heavy cupful of rotini, boil in salt water until al dente. The broccoli florets from the stems I used for the potatoes? Cut into small flowers and throw into pasta water right before draining. 1 chicken breast, boil and chop.

Melt 5 tablespoons of butter, keeping heat at medium low.

Whisk in 4 tablespoons of flour. Cook until golden.

It starts to look funny like this. Perfect color.

As soon as you add in 1 cup of milk the mixture thickens.

Add a second cup of milk, stir!! 

Third cup of milk.

 This is the last cup of milk, 4 in total. Creamy and dreamy. Add 2 teaspoons of salt.

 Looks good already doesn't it?

You could eat it now...Or put it in an ovenproof bowl and sprinkle bread crumbs and parmesan on top. Bake for 15 minutes.
