Coffee Cheesecake

I layered two slices.
 1 1/4 cups of graham cracker crumbs, oreos are also good, any cookie actually. Plus melt 1/4 ( I used about 1/2 cup) of butter/margarine.
 Mix crumbs and butter and press into your pan (mine is 7 X 12)

Tina's fail-proof recipe:
2 1/2 cups of softened cream cheese
1 cup of sugar
1 tbsp of lemon juice or zest
3 eggs
Preheat the oven to 350 F.
 In a mixing bowl beat the cream cheese with sugar to blend, on low speed.
Here I added about 1 tbsp of instant coffee granules that I grounded.
Beat in eggs one at a time.
Add 3/4 cup of semi sweet chocolate chips and fold in with a spatula.
Spread into pan.
Bake in a bain marie: put your pan into a larger pan and fill the larger pan with hot water 3/4 of the way up to your pan. Bake for 1 hour.
Cool, refrigerate for at least one hour.
